HISTORY NOTES:
With the 2001 vintage, Villa Antinori became an IGT Toscana wine, allowing Antinori to have complete control of the winemaking process. The design of the label has remained unaltered since 1928 with only the very slightest modifications in 1990 and in 2001.
WINEMAKING NOTES:
The 2019 season began with dry weather during the first part of spring then cooler temperatures and rainfall that affected the vegetative cycle, slowing down initial vine growth and causing a
subsequent delay in flowering two weeks later than seasonal averages. Summer was hot with well distributed rainfall throughout the season that allowed the grapes to begin an optimal ripening phase. At harvest time, the grapes had a good balance between acidity and sugar concentration levels, excellent aromatic potential due to significant day/night temperature swings during the final weeks of ripening. The grape harvest took place ten days later than in 2018. Merlot
was the first to be picked during the last half of September, followed by Syrah and was then completed by mid-October with Sangiovese, Petit Verdot and Cabernet.
TASTING NOTES:
Villa Antinori 2019 is ruby red in color. Its intense and complex nose offers fruity notes of black cherries, plums, sensations of boxwood, mint, and black pepper. The palate is medium bodied, well rounded with supple delicate tannins that sustain a lengthy savory finish.

The nose of this rum is simple but balanced. The vanilla and caramel contain some heavier notes of exotic fruits. The woodiness is spicy, caramelised and a little sweet. The fruit, also sweet, comes close to the vanilla to offer a velvety sweetness. The cane sugar syrup is spiced with cloves.
With a little airing, the woodiness comes through more clearly. The sugar comes in balance and quickly softens this drier tendency. The nuts are soft, blanched, as if pruned. They are reminiscent of sweet almonds or macadamia nuts, like in a cake batter. With the slightly floral aspect that follows, we realise that rum is not as simple as it seems, the weaving of aromas is rather interesting.
The entry in the mouth is soft and balanced. Sweet vanilla flavours the tobacco, and sweet spices do the same with the caramel. The woodiness is well seasoned and rounded, with pepper and honey. The rum then melts into quince and apple compote.
On the finish, the rum simply fades into notes of vanilla, tobacco and wood.
This is a full flavoured, complex Sauvignon Blanc. The wine has good depth on the nose with aromas of citrus, green herbs, hints of asparagus and a touch of sweetness. On the palate excellent natural acidity creates balance, a fine structure and a pleasant mouth-filling texture with a clean finish.

In the time of our ancestors grapes were harvested by hand, carried to the cellar in baskets and placed uncrushed into open tanks to ferment with natural yeasts into wine. In making our Whole Berry Cabernet Sauvignon we re-enact this lost tradition. The red wine cellar has been carefully designed on a gravity flow system. There are no pumps or crushers, so that the journey of the grape into wine is undertaken in the traditional way. Whole Berry maceration is followed by fermentation with natural yeasts, racking and one year's maturation in oak barrels. The result is a velvety wine with softer tannins and classical varietal characteristics. This traditional wine is unfiltered and unfined, which may deposit a sediment and might require decanting.
